I saw @zzerru post about head cheese a month or so ago and will try making some today.

No pigs head, but hocks, feet and other assorted pork scraps.

No real recipe yet, just tons of notes from multiple YouTube videos.
Pics and the ingredients I use to follow.
 
Looking forward to seeing your creation! Have not made any in like a year and have been thinking about it a lot lately so am anxious to see how someone else does it. Keep it coming please.

Cool. I’ve got a fresh pig head to do in this next week.
 
Not a head cheese fan. Taste is good, but the gelatin texture is not for me. I remember my grandmother in her 80's making head cheese. She was awesome.
Appears you got the collagen reduced from the good scraps.

Looks pretty close to my Grandmother's. Maybe a bit less meat or more collagen on the next round? I have no idea how she kept it well mixed so the collagen stayed in the center.
