Having temp issues

I used a MB dual fuel for a few years. The allure was that I could use the huge stash of cool wood that I had. You name, I had it. It was strange tho. Never used charcoal but propane and it either ran too cold or too hot. I used water for a while and moved to a foiled brick paver. Didn't really help with temps but the final product was better. More color and bark development. I can see it having problems holding temps if used in cooler temps and opening the door frequently. It is a larger cab size with no insulation. Contemplated a needle valve mod but on a whim I scored an MES for $99 and learned of the AMNPS and I am 100x happier. I made some great stuff with the dual fuel but it was a stressful smoke and needed nearly constant attention. MES + AMNPS is almost set and forget. This reminds I need to list the dual fuel on Craiglist…
 
Okay guys I appreciate all the feedback! I made some minor tweaks that really made the difference...

#1 moved the water pan higher up
#2 added more charcoal then last time because moving the water pan higher up allowed me to get more charcoal in the burner!!

I'm still mastering everything with my smoker here with the temps because of the charcoal burning so fast causing me to have to replace it every 1.5hrs.. I was thinking for my next smoke going 70% regular charcoal and putting some wood charcoal on top... any thoughts?

Made a couple of chickens again and some bacon wrapped cheese burgers... starting to get a hang of the temp guaging with the smoker!
