The season is beginning. I am so excited. I been using some from 2023 in freezer as I used up my newer ones. Note to self, freeze more this year.

I usually wait until August to stock up. I think those taste better than the early Chile.

Yeah I hear you but all I need to make your dish now. Got the poblano peppers yesterday. Could not find any smaller ones. Might just use half a pepper wrapped around cheese. The only Mexican cheese was Fresco, crumbling cheese so I got Monterrey. Soon as I get the hatch I will be making it.
 
When I lived in TX, I used go to Central Market in SouthLake to get mine.
They had a truck load a day shipped it. Had to get there early before they sold out.

Now that I'm closer to the source :emoji_grinning:, I can get the big bags full.

texas twinkie but with Hatch.... brisket cream cheese in a hatch wrapped w bacon and smoked. I like em better than jalapeno version. But then I tend to be a bit of a chile head.
