  1. Has anyone tried making pastrami from pork? I was thinking of giving it a shot any input would be good. Thanks guys.

    I read that the original Romanian pastrami was pork - so give it a shot and see how it goes!

    I think that would become Buckboard bacon if you used a butt, or Cooked Capicola if seasoned with paprika, and red pepper, either way great stuff. I don't see why using the pastrami rub and seasionings wouldn't work.
