Still a relatively vac sealing noob but did a dozen+ pieces last night and by happy mistake (ran out of roll) I found out that the 8" width bag fits the standard store 8oz blocks really well. I actually got 2 blocks per bag. Then I found you can get 8" rolls too. Just posting since I don't remember seeing any info like this before. Any other pointers for vac sealing cheese welcome.

Hi Z,
Recently I got two 50' rolls of 11" wide commercial vacuum sealer bags. What I like about these is one side (back) has the pattern, and the front is clear, so when you use it you can easily see what's in it.
I use a paper cutter to cut my bag stock to size. I was using a Guillotine type, but recently started using my roller knife and found it works better.
I like being able to make my own bags.

I found what appears to be the 8" variety.
In fact, dang it, I just bought the two rolls of 8".
I'm going to be in the bag for a while. :(

I use these to bag up chicken to Sous Vide.

I use the 8 inch roll all the time especially for cheese and single serve meals.

I use the Pre-made bags for everything, unless I have something that won't fit in my biggest bag.
Then I use whichever roll I need.
Like Al, I always use the smallest that will do the job.

I found that it works much better to use the bag cutter that's built into my Vac Sealer than if I cut the bags myself.

I have found wrapping the cheese blocks in plastic wrap, then bag sealing, makes for easy removal of 1 block and resealing what's left..

I got a bunch of pre-made bags off amazon I think 50 pint, 50 quart, and 50 gallon bags for like $18. Don't know if that is a good deal but when I did 60 blocks of cheese over a couple weeks seemed like it saved me a bunch of time! Had to order a few more pint bags.
