I always use cooked meat ... that way when the peppers look right, you can just dig right in ... I like to top mine with grated cheese ... makes a nice smoky cap that holds in the moisture. Almost forgot ... I add cheese to the stuffing as well and I cut my peppers the other way ... easier to fill and they don't fall over.
The cooked meat I got from the first time you posted this pic. I wish I had remembered it before I smoked this batch, next time I will try cutting them vertically. Either that or someone needs to design a Chili Grill for bell peppers lol.
