Do you always dehydrate or can you finish jerky just by using the smoker?

VA has been humid! even on the coast...

That's gonna be some HOT jerky! good luck! Freeze it when done it helps in the summer to cool you down...

I make jerky both ways, dehydrator and my smoker. some get liquid smoke some real smoke. Just depends on my laziness.
