			I used fresh milled flour but you can use store bought.
		
		
	
	
		
 
	
420 g bread flour
60 g rye flour
130 g leavain (or active starter) I reduced to 100g
215 g water
117 g Guinness extra stout beer
10 g salt.....Mix all of the above, cover and let rest for 30 mins, then add the salt.
