Medieval style black sourdough.
Fresh milled dark rye with rye meal. Fresh milled hard white with caraway seeds. Replaced water with cold coffee, added malted barley syrup, salt. 2 day fridge ferment.

Not sure if coffee is medieval but I'll follow your lead.
I use barley malt syrup for making my bagel based recipes. Unique flavor with no substitute.
