Made these on Wed for dinner,my brother came up to join me on a fishing trip.
Started off taking most of the fat cap off,and slitting them to create a pocket

Wife wanted some Orange Marmalade in them

I stood them up at first indirect heat

Rotate them a few time watching the temp

I missed the plated shot so I had 1 leftover for my dinner last night.

Looks good. Don't see any of the Orange Marmalade in the opened one. Does it just melt into the stuffing? Since it was stuffed did you have to go past 145-150?

Joe they get a lite taste of Orange,I use the Marmalade when I filet a loin and roll it,different stuffing may have to do one of them.Thanks for the Like

No I didn't let the stuffing cool to much and had the grill ready.
My IT was 135 pull 140 after resting

Hey Rich Thanks I did these a few weeks ago in the cast iron,this was more challenging LOL I used a tongs to turn them.
