Grilled ono and tuna bellies...

I scored some ono fillets at work, can't beat free(!!!) and since we also had a primo grade ahi I figured it was gonna be grilled ono and ahi for dinner!

Firing up some kbb, kcb, with some kiawe, guava and ohia lump charcoal.

I put my 22.5 WSM charcoal basket in there as well and dumped the mostly lit chimney in the center. I originally had my mini basket in the middle but there was too much charcoal and just dumped it...

The fish was seasoned with cbp, garlic powder and Costco no salt seasoning. My wife is on a no sodium diet for the next month. The fish was arraigned around the perimeter to get a little smoke.

I finished over the center making sure that it wasn't over cooked.

Plated with green beans, spicy tartar sauce, and hapa rice with shiso furikake.

I've grilled skipjack and albacore.... not much finer eating....... looks awesome....

This was a very tasty meal... Unfortunately yesterday was my last day at the fish market! Next week I'm gonna be helping a friend work at his place. Good bye smoked prime rib and marlin; hello smoked octopus and Hawaiian style smoke meat!!!

If anyone wants to see what a big doofus I am gonna be on tv sometime in August on a new show on the discovery channel called "pacific warriors." It follows some local fisherman who fish for a living off of one man kayaks. They filmed me buying fish from one of them...

Thank you! One of the benefits of working at the fish market was all the fish that we got to take home! The cash tips were always appreciated too...

Hopefully I can get some good fish from my friends new fish market!!!
