Hi - I am an "oldie" newbie. New to SMF, not to smoking. I have been smoking for years starting out with cheap charcoal smokers and evolved into a gas vertical. I have heavily modified my smoker and love the science behind smoking. My favorites are briskets and baby back ribs. It took me longer than it should have to invest in good thermometers and manage the temperature - sometimes my learning is slower than my cooking method :-).
I have been looking over the forums and am impressed with the wealth of knowledge, the strong participation, and the tight management of the forums - kudos to all involved! Already I have picked up several good ideas for my smoker, a few things that I did not know that I probably should have, and a few recipes that I can't wait to try out!
The Mrs. talked me into 39 days of being a Vegan - that's right no meat, no milk, no egss, no cheese. I will honor the agreement but rest assured the experience will only make me appreciate that which comes out of my smoker. Imagine the pain I am experiencing looking at all of the deliciousness in these Q-Vues!!!
