Got my first gig......

I no sooner got the first cook off my new cooker when I was approached about doing a charity gig.

Pulled pork for 75 people. Can't wait to get that cook rolling! :emoji_cat:

I can do 6 pork shoulders in my Baby. That should be enough....

I personally always go with 6oz, because I like fat happy people. and at 6oz you're gonna be fat and happy lol. So I say 56lbs raw, might be pushing the Baby, but it might work.
 
Thanks all for your sage counsel. I am certain now that I can fit all the meat I need into my smoker in one cook. Looks like 5 - 6 butts is what I am after here. Perfect!

AGREED...For Folks on a Paying Bases!. This is Charity. If I'm Giving It Away, 4 oz is a decent Sandwich on a Hamburg Bun. You spread a little Goodwill that won't break the bank.
Speaking of Fat and Happy, I figure 12 ounces for a Family event at my House! The Men and Women, alike, can put down some BBQ! Then you got Grandma, half a Dozen Aunties and the IN-LAWS Who all want a Doggy Bag to go. NONE OF THEM HAVE DOGS!!!!...JJ

LOL... That's how it is with our family dinners. I always make sure I have plenty. My nephew always says he wants to take a little for a sandwich for lunch the next day as he's filling a GALLON zip lock bag!!! :emoji_laughing:

Don't shame his sandwich! Just because you can't eat a 1lb sandwich for lunch doesn't mean he shouldn't live his best life!!!!

We went the 4 oz route for my son's wedding Wish I would've gone the 6 oz route instead. There was absolutely none left at all. Not even enough for a cracker. Darn kids nowadays can eat
 
You got honored for the ability and knowledge to "make it so" for mass consumption.
I hope the others involved arrange for massive sides.

I've made a lot of pulled pork for potlucks and sometimes the offering by the others is dismal.
 
Congrats! I gotta ask, how do you do a gig like that? Start at home and wheel to gig? Or camp out at the gig? I mean, that's gotta be at least 12hr smoke right?

I only measured one time but I got near 80% yield from injecting. Something I like to point out in yield discussions. Also, I never put all my eggs in one basket (and that has saved my a$$ many times) so I'd do 2 runs.
 
Zwiller, If you add weight by injecting, your yield Will go up. Same with the Frozen Pulled Pork grocery stores sell. 4 pounds Pork and a pound of BBQ Sauce mixed in gives, a nice profit. The Chicken folks inject water weight. Some Pork producers and Asian Farmed Shrimp folks do too. You can make a nice profit adding 10%+/- water to the 9 BILLION Chicken sold in America every year...JJ
 
I am going to do the cook at home then bring the resting butts to the event and shred them 2 at a time into a full sized pan as needed.

I am going to serve 2 kinds of Bubba Q juice with the pork. South Carolina Mustard and one of the ketchup based Bubba Q sauces.

I think I am going to use a SPOG + brown sugar rub for all the butts and give them a hickory and oak whiskey barrel smoke.

I am not sure if I will inject them. Wondering if the final result would be worth the time.
