After a weekend of smoking I'm going back to my good ol ribeye grilling. On the Treager for 30 or 40 min and on to the 600/700 charcoal grill for a quick sear. Damn they look good. Tomahawks are going to take a few minutes longer. All good as long as all come out MOOOOWING 20180904_174047.jpg
 
150deg for about 1.5hrs or a little less and then a quick sear on both sides (using GrillGrates) to get those epic diamond grill marks makes for some of the best steaks you can possibly eat. I have many methods available to me (sous vide, cast iron, flame torch, etc.) but steaks (either ribeye or NY Strip) done using the smoker to get a nice deep mahogany red color and take on a smoke kiss before getting seared to caramelize just the very outside surface before eating is the best way IMHO.
 
Forgot to include a pic I took. Just went on 15min ago so it doesn't look like much but when they're done in the smoker the color is incredible.

Glad you posted yours once they were done because when ours were finished we were so hungry that there was no time for photos. That being said, ribeyes are the best steak & if wasn't for the sale our King Soopers was doing on the NY strips I normally go for bone-in ribeyes. So delicious and I'm jealous that we had to settle for NY strip. lol
 
Looks real good. Cannot beat the good old ribeye. Kind of a luxury around here as they sale price at $8.99/lb if lucky. Still, eat em all the time just because they are my favorite steak.

We only get when local stores have on sale $5.99 lb
The smaller steaks were from a prime rib we had from Xmas. Can't beat the sale price at $10.99 or less during the holidays. The last couple of years we've sliced at least one into steaks. Best damn ribeyes we've bought

Now the Tomahawks were a different story, the wife got for my Bday, still at $9.99 lb was a steal even at $52 and change for both. Couldn't go out and eat for that. Still was melt in your mouth tender

I vac sealed and froze most of the leftovers from this weekend. It's a test to see how everything comes back after thaw. I will keep tall posted. I'm sure I'm not the only one that has wanted to try this. I know my pulled pork has come back great
