Good morning all. My name is Carlos Montano and I am from Albuquerque NM. I currently have an MBE 40 that I have been using for about a year. I have mostly done ribs, chicken and turkeys. I have done one prime rib that was ok and one brisket that was a complete failure. I just ordered a Oklahoma Joe's longhorn that should be here In a week. This seems like a great site and I am looking forward to learning how to smoke pork shoulders and briskets. I am also eager to learn how to use my new offset stick burner. Something about staying up all night tending my pit and enjoying the results the next day excites me. Any information on mods, tuning plates or baffles for my OK Joe's would be great.
