Appreciate the add to the forum. Suffolk VA is where I hang my hat. Hunter, fisherman and taxidermist I typically get a fair amount of venison. I have been making venison summer sausage, breakfast sausage and snack sticks for about 3 years and have just really started smoking them. Right now I am using a Sportsmans Elite gas smoker and am still learning how to use it the most efficient way. Joined to improve my knowledge because we may be opening a business next year processing deer.
