About 90# to be exact!

picked up a case of butts the other day

going to make 25# of venison/pork Jalapeno and cheese summer sausage

and 50# of smoked Kielbasa. and most likely finish off with some breakfast sausage since I am out

here is the stock

70#  case of bone in Butts got em for 1.42 a pound this time. that is probably the lowest I have paid in 6 months

17# of venison, I will add 8# of pork to round it to a 25# batch.

I will grind it today and start making the sausage tomorrow

smoker will get fired up Monday morning for the first batch of Kielbasa

stay tuned and I will update as I go along
 
Wow!  Great price on butts!  Did you get them from a wholesaler?
 
Yep thats a good price...good luck your going to be very busy. Cam`t wait to see the Q-View...

Here I am grinding  up the butts for Kielbasa. I make my Kielbasa like the old polish people from Chicago and use a rather course grind 3/8 plate ground once!

it took me about half hour total to grind 85 # of meat! another half hour to clean up

25# of the pork for the Polish Kielbasa. I make 25 # batches because I mix by hand and it makes it easier to mix

I wound up with 10# of pork left over to make a small batch of Breakfast sausage.

all back in the cooler til tomorrow. I have a dinner to go to this evening so i will resume  tomorrow

not really too tough to throw a batch this size together when it just a couple different kinds. I have made 120#  in one day making  4 or 5 different kinds and not counting smoke time only took me about 6- 7 hours ! now that is a big job! LOL
 
Lookin good! To me it doesn't seem much different making 2lb or 50, set up and clean up is mostly the same. I haven't done 90lb though! Can't wait to see it all stuffed and smoked!

I am working on my smokehouse so right now I have to use my GOSM for my smoking, so it will take a few batches to get it all done

I have a 4X6X 6ft tall utility closet I am turning into a smoke house. when I get that done I will be able to smoke as 100# or more at once with no trouble.

the beginning! but this is fodder for a whole new thread to come
