Have some Umai casings. Want to try a beef version. Had AI give me some recipes which look good. I guess it is similar to Sujuk. Anyone tried making Ghiudem? Thanks
 
Tradition says beef & sheep. I would consider having lamb in that strictly for 'authentic' but.....?

Be sure to update us when done.
I don't care for lamb/sheep. Will probably go all beef or maybe 80/20 beef pork.

Hopefully get a decent result.
