Well I woke up this morning at 5AM to get my Butt going.......then ummmmm the snooze alarm went off once......errrrr ok like 6 times.  So at 6AM I finally climbed out of bed

  Great thing is I am not on a time crunch as this won't be used till Saturday. 


Twin Butts got some more rub on them


I can taste it NOW.

Each is 7.5 lbs. so this will be a long smoke.  I am using a mix of Pecan and Cherry this time.

Don't like to peek......but I HAD to!!!!

Now we will go onwards and upwards to the Stall!!!

In the meantime made a batch of Chef JJ's finishing sauce (first time using it) thanks JJ!!!

Looking good! I like cherry and pecan south inhale to do a 50/50 mix! So good! Just vac packed my pulled pork I did Saturday, gonna make some fine Pazole once the hatch chiles get here!!!
 
I couldn't stand the smell coming from my backyard any longer so I found some Vac sealed PP from last smoke and I am making Pulled Pork Nacho's for dinner.  Will be posting that too

Damn stall is still in full effect......wait.......we seem to be moving up.  2 hours at 175F and now I am seeing 178F  YES!!!
