Okay, you've convinced me!! I thought the meat would get covered with charcoal dust....so it sounds like blowing off the coals is key. Those thighs do look nicely seared!!
I didnt want too try it either.   Keith and I had a little bet and I lost.   So I had to do it,  works great.

Just completed my first smoke on my mini wsm!!

OMG I think I just died and went to heaven! Done pulled pork in a dry rub and bastes in apple juice and used apple wood



It was a joy to eat believe me...and I hav made my missus understand the madness of smoking!
