German Style Oxtail Soup Ox and Chaos

We had a big get together with some close friends and decided to make it difficult!
it became chaotic towards the end so pics kind of fell off! Three big dishes, Ox Tail soup, great German recipe, Jeff’’s Sweet snd Sticky Honey BBQ Ribs, then another truffle/herbs de province/bacon weave prime. These were worked simultaneous over a couple days.

Roasted the Ox Tail in hickory for about an hour (pork butt going at same time).

Then began a long 6 hour simmer of the meaty bones in onion, parsnip, carrots, celery, garlic, and thyme bath.

Then strained broth, picked out meat, put it all back in with fresh diced parsnip, carrot, celery, garlic, and onion. A beef round I smoked and diced up (below ) was also added:

It became chaotic towards the end, didn’t get a bowl picture. I did add about 1/4 cup butter to French it up before serving. Amazing flavor snd big hit, Im glad I added the extra beef!

While that was going on I made three racks of Jeffs Sweet snd Sticky Honey BBQ Ribs. Wow, these were amazing and disappeared fast! The only modification from Jeffs recipe is that I wrapped the last 2 hrs, more for easier handling than anything else:

Finally another Truffle wet rubbed Prime, herbs de province, and bacon weave.Also did a reduced red wine sauce. Cooked this one at 400 which crisped the bacon this time!

That looks delicious! So I'm guessing the chaos started at the same time as the stampede to the food line did! You did awesome!

Wow that all looks amazing Jed ! Gotta try the oxtail. There's a soul food joint here that only has it on for lunch on Fridays and I can never make it by there. Looks like I need to follow you and make it myself ! Great cook and I'm sure it was gone in a hurry

Where do you find ox tails? Oxtail soup has been on my wish list a while but I never see them around.

wow that looks like a feast! I use ox tails all the time for Au Jus, but they usually always get eaten after they have simmered all day....That soup would be the bomb!

I just love the oxtail soup. I usually braise them, now that I have a smoker I am going to have to smoke some. We have a japanese market where they had, before covid, a full case of them and one can buy the exact size they want. I would buy the biggest ones and have them as a main course.

Thank you Ryan! I appreciate it for sure. It did get a little crazy as the food was coming out! People were hungry and the beer flowed like wine… a bottle of scotch showed up too…. Good friends, food, and drinks, add on the kids happy and preoccupied it made for a fun night!

Thank you Kieth! Here is where I got the oxtail recipe, I modified a bit with adding more beef and some butter, also some iPA. I love it when I can find it at Restaurants, normally overseas, first time cooking it though. Lots of fun! You gotta try the soul food place though, I bet it’s amazing!

I picked these up at the commissary, Costco has them too. I don’t think they are hard to find, but easy to look past them!

it’s a great soup! I’ve never made it before, but the CI in the smoker worked well! We have a few international markets nearby that are fun to check out. I’ll keep my eyes open!

A lot of delicious chaos!! Oxtail is pretty popular and absolve around me at some of the Mexican markets. I’ve meant to try doing something with it.
It was chaos! Oxtail was a lot of fun to make and delicious. I was glad that I added the extra round though. Not a lot of meat with the tail alone and when you get picky eaters a lot of the protein/fat gets left out. Stew meat is a perfect addition. Good luck!
