We had a big get together with some close friends and decided to make it difficult!
it became chaotic towards the end so pics kind of fell off! Three big dishes, Ox Tail soup, great German recipe, Jeff’’s Sweet snd Sticky Honey BBQ Ribs, then another truffle/herbs de province/bacon weave prime. These were worked simultaneous over a couple days.
Roasted the Ox Tail in hickory for about an hour (pork butt going at same time).
Then began a long 6 hour simmer of the meaty bones in onion, parsnip, carrots, celery, garlic, and thyme bath.
Then strained broth, picked out meat, put it all back in with fresh diced parsnip, carrot, celery, garlic, and onion. A beef round I smoked and diced up (below ) was also added:
It became chaotic towards the end, didn’t get a bowl picture. I did add about 1/4 cup butter to French it up before serving. Amazing flavor snd big hit, Im glad I added the extra beef!
While that was going on I made three racks of Jeffs Sweet snd Sticky Honey BBQ Ribs. Wow, these were amazing and disappeared fast! The only modification from Jeffs recipe is that I wrapped the last 2 hrs, more for easier handling than anything else:
Finally another Truffle wet rubbed Prime, herbs de province, and bacon weave.Also did a reduced red wine sauce. Cooked this one at 400 which crisped the bacon this time!
