3 racks of St.Louis style ribs.

2 Pork shoulders.

All from Cosco

All rubbed with Cowtown The Squeal Hog Rub. A really great rub which I recommend unless you mix your own.

Shoulders on @10AM 

Ribs on @12pm 

The Assassin 28 purring at 265 deg.

Hickory wood chunks for the smoke and Kingsford charcoal for the heat.

I will wrap my ribs. And usually the shoulders too but this smoke I am going to let them go without wrapping. I want to compare the bark to my norm.

Thank you AB! They were tasty. Only the second time doing spare ribs. I always do baby backs. I will be doing them more for sure.
