17lb prime packer from Costco. Had been in my freezer a while so it was time. Woke up at 5am, got my 36” patio fired up with pecan splits. By 6am, I was ready to roll.
After trimming, this beast was 13.5. My plan was hot and fast, keeping temps in the 275 range. I figured between 10-12 hrs and she was done in 11:45. Let her rest for an hour so I could clean the Lang and myself. We made a simple Cole slaw and cucumber salad to go along with it.
I love my Lang because it’s so consistent. I have come to know what to expect when I do brisket, and that was always my ultimate goal. Brisket is our all time fave!!
Oak ridge black ops rub. One of my favorites.
Hope everyone enjoys their weekend!
