Yeah Kevin... The hot dogs are the most expensive to make.. The cost of the casings and the spice "mace" which it uses. Plus the extra time in processing the meat to puree and stuffing those little buggers..... I made 20lbs of franks but I had as much work in it as making 100 lbs of kielbasa.......
I had a thought, with those sheep's casing are those frankfurters not a bit pricy to make? I just bought natural sheep's casings from Butchers & Packers a couple a weeks ago and did a small gasp.
Sort of worried now, I bought 'em thinking of making some breakfast links, Those have always been a huge hit around here.
Do you think the "fresh collagen" casings will work or shall I add the sheep casings to my order?
I got a Kirby mixer last fall and must say it will kick some butt. If I reverse the blade, it is supposed to make the mix into a hot dog texture so I will give it a go with the batch of dogs.

I'd go with the natural casings....collagen just ain't the same. Actually I'd use a cellulose or plastic casing to make a skinless dogs before I used a collagen....But thats just my opinion.
