Jo-Bawbs is great barbecue.
I rate him with my other two OKC favs, Edge Craft and Butcher. He has a trailer parked in an industrial warehouse type area at 7921 Northside Dr, its very close to Wilshire and Rockwell, just north of Wiley Post Airport.
He has a small dining room with no A/C behind a couple of garage doors. Ya need to plan accordingly, get there in the morning.
Jo Bawb smoked comp barbecue in Wyoming, the Dakotas, Kansas, Colorado. He moved to OKC 6 years ago. He's cooked in the Jack Daniels five times. He's cooked the American Royal Open and Invitational.
He's got pics on the wall of him with Myron Mixon, Tuffy Stone, Jamie Geer, Johnny Trigg, and others.
He cooks on an Ole Hickory roti that's in the trailer. Uses pecan.
And we met him.
He was more than willing to talk barbecue and he showed my wife and I his trophy room. Pics are only a small number of his wins.
I got 1/3 pound of burnt ends and 3 ribs. Mrs Okie got pulled pork and sliced brisket. Unlike Texas barbecue, you did not order brisket by fatty or moist. So I said something about brisket point and was directed to his burnt ends. They were delicious, melt in the mouth, right amount of seasoning. Best burnt ends I've had.
The ribs were excellent. Perfect doneness. They appeared and tasted something like Texas ribs but there was some other flavor there, I could not define. I asked him if his barbecue was closer to Texas or Kansas City and he said it was mesh of both.
Mrs Okies sliced brisket was flat, but very moist, perfect doneness, a lot of flavor. I asked him if he injected and he said no, just his own seasoning.
Her pulled pork was OK. It had a really different flavor. I did not ask, but I bet he injected.
Mrs Okie got potato salad which was mayo/mustard dressed like we do but did not have the sweet we add. It was so so. But the mac and cheese I got was great.
We will be doing this again. We got there just before 11 am and there was no line. Several people showed while we were eating. They put a sign on the door leading into the dining room " No A/C enter at your own risk " . It was not bad at all. Plenty of fans. And I'm now a fan of Jo Bawbs.
