Way better texture than spam.    Nice bacon flavor.    Needs more smoke in my opinion, wife couldn't even taste the smoke.  
 
Every time I see it fried up it reminds me of scrapple.
Except Fried Scrapple is Gray/Brown to almost black, and this kind of thing gets reddish, & tastes a lot like Bacon or smoked sausage, because it has cure in it.

I was practically weaned on & love them both, but I'd take some of Adam's fried up stuff before any Scrapple I ever had.

Yup Bear.   I absoulty love scrapple.   I happen to have some in the freezer I might get out, this formed bacon would go great with it.
 
I want to make this Adam. Been inspired by your work. Looks great. I do love Scrapple and Puddin' too! For you not familar with Amish foods...Puddin' or Pudding Meat is kind of like Scrapple but no corn to bind it. Where Scrapple is mostly cornmeal cooked in seasoned Pork Broth with some meat, Puddin is typically all meat, usually from the head, Offal and boiled bones, ground fine and uses the gelatin to set it rather than a cereal starch like corn...JJ

I think you would like it.    Needs more smoke thou.   

When we made puddin meat we didn't use a binder.   Just real fine ground meat made the way you described,  put on top of pancakes.

Thanks Gary. I been wanting to try it. Finally got around to it.
 
This looks great! Nice job......got me thinking, but my wife just might kill me if I send anymore money on meat for a while!! Just kidding, she loves most of what I make, and this would be for the whole family to eat for breakfast.
