Been reading for a couple years finally creating a profile!

Currently toying with a 2017 Traeger Pro 34” with Smoke Daddy’s PID, Big Kahuna Smoke Generator, 10ga SS heat shield, and 11ga SS drip pan. Original owner had installed a stainless firepot and ceramic hot rod. I also tossed on a PelletGrillAccessories downdraft hood slotted to mount on a Pro for good measure. Using a FireBoard FBX11 to monitor. Been through a 2012 E75 body currently tweaked with Smoke Daddy parts and the Pro controller from this unit and passed to the daughter (SMF - BBQuesBabes). Who by the way is doing her very first solo smoke TODAY! I was upsold to a 2017 Traeger Select which was returned to the store from whence it came! The Select wasn’t for me at all.

Anyone from some of the hot rod forums might recall seeing ‘freemaSSon’ screenname. Non-other than ‘Rage’ here! Hence ‘TeamRage’. It seemed a logical choice having had ‘TBSS Rage’ as my toy. Only those as mentally depraved as I am will find the humor in it all.

Today’s carnivorous choice is 2 Pork Butts.

Welcome! Are those grill grates I see? If so, how do you like them on the treager?
I was wondering when they would be spotted along with the Smoke Daddy Sear Station they’re on.

I absolutely love the grill grates! I wasn’t paying attention when I was inside my friend’s grill shop in Frisco, TX and bought 18”. Gonna give those to my daughter and do and entire grate replacement with a 19.25” set! They’re like the best thing I have every used as the cooking surface. I love them and would encourage any pellet grill owner to dig in.
 
You are the second one I've heard swear by Grill Grates. (And yes I spotted them right off. I'm just late to the Party.)
Your lead in sounds like a Treager that's been Balanced and Blueprinted. LOL!
HAHAHA... Too True... I even reengineered the mounting setup Smoke Daddy provided for the smoke generator. Would mount tight enough for my OCD.

Coming from a family that sank nearly every deposable dollar into street rods or racing it is nearly balanced and blueprinted. I was going to opt for the Timberline but instead decided to take the 34” barrel and make it exactly how I want it. To craigslist I went and this brand new 34” Pro was waiting for me!

With the sear station in place I slide the grillgrate off to the side and smoke the steaks till 125. Then remove the meat put the grate over the sear station and crank it up for about 10 minutes. Likely the best Ribeyes I have ever made. It’s worth noting here I have a sous vide I have used for years and do a finish sear in a cast iron skillet. That setup can never produce a wood fired steak flavor. I even had the cold smoke generator cranked up when I made the Ribeyes! They were that good! Anyone else who has done a reverse sear with direct heat over the fire pot can chime in also.
