I just did one in my MES yesterday. Got it done in under ten hours, a record for me. I didn't start spray apple juice on it for the first three hours. I've decided that the spray increases the rate of "the stall" and since you're not going to get any carmalization of the sugars in the spray until things start getting hot, I didn't see the point.
