To me, what you have described are no more ribs than a chicken has fingers ... ours are the loin portion connected to where the ribs and backbone meet, then butterflied open. Also known as Texas style here in Ontario.
Thats what are look like here in Florida, more a cutlet. Usually no bones, or maybe a small piece. They tend to dry out easily so I stay with the grill for them.
