Mballi, I do have a foodsaver. I am going to seal them tomorrow and throw them in the freezer.

BBQEng. I appreciate the comment on my "second rack" if I had you skills with the metal I would make a smoke like yours. I have to say out of all the smokers I have seen, your is my favorite. (Maybe I should throw some money at you, maybe talk you into making me a smaller one.)
