I made my first batch of breakfast sausage. It started with a 4.5lb boneless butt roast. Ended up with just over 8lbs of pork sausage. Live and learn.
Recently I was gifted an electric meat grinder/stuffer from @smokin peachey and I was dying to make some homemade sausage. So, yesterday was the day to make breakfast sausage patties. Wife picked up a boneless pork butt 4lber. Not to big. And choose @pops6927 sausage recipe: salt, pepper and sage. Simple enough. Did my meat to spices ratio. Double checked myself on the ratio. Seemed right. Well, I was waaaayyyy off on the ratio. Mixed enough spices together to make 8lb of sausage!!!! Only reason I found out is when I sampled a piece. It was like I poured Morton salt in my mouth. Had the wife look at my ratio, and sure enough I screwed up!! Wife ended up going back to the grocery store and buying 4lbs of ground pork so I could mix into my sausage I just made. Fried a small piece.....much, much better. I like the taste.
I believed I saved this one. Live and learn. Now I have 8lbs of breakfast sausage in the freezer!

Nice save on the sausage, and glad ya got to use your new toy! You'll be glad you have that much, it goes fast!

Nice save on the sausage. Looks delicious, I know it is because I use Pops mix from time to time myself. That said, his recipe is just a bulk mix that once put together you either use 1/2 oz. per pound or 1Tbs per pound depending on how you measure (weight or volume) I store the rest in a mason jar for future use. Can make a pound at a time or 10. Not sure how you goofed, but was still a great save. Here is the link to Pops recipe.

It’s actually over 8lbs! All I know is it worked out. Next time wife will be doing the ratios for the spices.
Great save Yank. Sausage looks good. Did you use your kitchen aid to mix it?
Nope. Mixed it by hand.

Didn’t realize he was making a bulk recipe. That’s where I goofed.
 
Yup---Definitely a Great save!!
That's the reason I tell people to "check things, while you can still do something to fix a slight error."
I test fry every Batch of Bacon I make, and I have never found a mistake.
Yet I hear guys bragging "I never do a Salt fry test---I know what I'm doing!!!"
Fine---They probably never look both ways before crossing the street too!!!!

Good save! The sausage looks great. Next step is to stuff and smoke. Then you'll really be hooked.
 
Looks good . You got a good mix on it .
If you think 8 pounds of the same type is to much , use a couple pounds and add spice to make something else . Salt , pepper and sage would be a good start for something else .
 
Great job and a GREAT save... If you don't already have one.. A vacuum sealer is going to be your next investment... I will make up my patties and freeze them first before vacuum sealing them... That way it doesn't mash them all together when vacuuming ... then put how ever many you'll eat at one time into a bag and seal it up...
