I have zero regrets about getting my Lang. I highly recommend itCongrats on the first cook, I will eventually get my hands on a Lang. The brisket looks like it turned out great!
Thanks Aaron, great tips.That looks great! sorry i missed this thread before. as far as starting the Lang weed burners are nice but if youdon't have and can't get one (my wife wont let me have one) there are starting alternatives. you can use a charcoal basket. (which i used to use) or similar to Smokin Al's methods but i use 2-3 starter cubes under the grate in the firebox. i just light them and let them burn the charcoal and wood for a while until there is a fire going and then shut the cook chamber with open lock so it drafts for a few more minutes then shut the cook chamber the rest of the way and let it heat up.
here is using a charcoal basket..i put in wood
then i put in hot coals on the wood
then i put the basket in the smoker and let it catch fire...
the other way similar to Al's with the lighter cubes...

You will find what works best for you. make sure to remove the ash from the bottom of the smoker (under the grate) before you start your fire to get good air flow. you will figure out the position of the dampers for the temps you want to run. learning your smoker is part of the fun!

Thanks again Sonny, absolutely loving the lang so far.I kinda do both. I have a folder on my browser named (aptly) Smoking Meat. I drag and drop links in it.
But, I also have a 3-ring binder I will print out things and put them in so I can lay it on the counter to work from.
If I was more serious about being paperless, I'd use my Baby Dell 2 in one as a portable compooter. But sometimes a printed sheet is just so much nicer.
