Found some nice looking baby backs at the Wallace World and thought I'd give them a try.

I started out making Jeff's rub but didn't have enough paprika so I used some guajillo chili powder (sorry Jeff)...which changed the taste slightly and added some heat I think. I did make Jeff's BBQ sauce and it was a real hit!

Had some trouble keeping temps down, a front blew through and the winds were all over the place...I reckon I average around 250-255 for the duration. And since I wasn't sure on the BB's I may have went a bit long. I did 2-2-0.5 because when I took one set out of the foil they just fell apart. I went ahead with the 30min because I apparently added too much liquid to the foil and the the rub was very wet....cook and learn, right? I hit them with some BBQ about 10min from taking them off.

My wife really liked the ribs even though I think I can do better, they were very tender (too much really, bones pulled freely) and tasty. Used some pecan wood and a piece of hickory along with RO lump and a base of kingsford blue. I used my ET732 to check temps at the center of the cooker and the left end, used a cheapy on the right side, temps were about 15-20* apart right to left.

Anywho, here's the Q-view (I'm a poet and didn't know it....I can make it rhyme every time

They are maybe too tender but as long as the flavor is on point, adjusting time is the easy part. I love Guajillo in rubs...JJ
