First pork butt!!

Being someone who works 7 days a week. I really don't have a lot of time to do long smokes. Took a few days off and decided to do my first pork butt. Well sleeping in is rare for me so I slept in till 7. I got the butt on about 9am and everything was going really well till about 6pm took 3 hours to get from 165 to 170. I wasn't planning on wrapping the butt but really started to change my mind about 8pm. But didn't wrap it and I'm really glad I didn't. Finally finished at 210 IT at 3am, so overall it turned out really good. But 17 hours for a 6.5 lb butt, next time I will definitely start smoking the night before. Having to add more water every 3 hours and pulling the pit apart 2 times to add more charcoal didn't help. I have a barrel for a USD build I've been planning. I think it's time to get it done.
 
That Pulled Pork looks pretty tastee to me, good job!

Time is determined by temp. I do mine at 220. Takes about 18 to 24 hours. Nothing but tender juicy meat! Don't need BBQ or finishing sauce although I like a clean finishing sauce like JJ's. Put it on today about three, it will be ready tomorrow maybe noon, or later... who cares. It leaves plenty of time to set and redistribute the juices. But the fatty bark seems to fall off and ya know once it hits the floor it evaporates and is never seen again. Its the ambrosia of the Gods!

You'll learn you can't really smoke by the clock. Its what makes smoking so relaxing. I tell everyone that the reason you can't forecast the time/temp is no one ever taught a pig how to tell time.
 
That looks fantastic, especially for your first. I usually smoke at a higher temp w/o water that way I don't have to worry about doing an over-nighter or a marathon.
