I just smoked my first pork butt ever.
I have cooked them in a crock pot and pressure cooker, but smoking is a whole nother animal.
I started off with an almost 9 lb pork butt from Kroger.
I scored the fat.
I haven't seen this in a lot of smoking, but in BBQing in general, I have done this in the past to get a crispier texture.
I rubbed it mustard and then gave it a BBQ rub.
I attempted to keep the heat between 250-275 the whole time.
I used a mix of hickory and apple wood for the smoke.
After each hour I spritzed it with Apple Cider Vinegar.
Hour 2
Hour 4
Hour 5
At this time it was just hitting 160.
I wrapped it in foil and let it cook until 198.
I let it rest for about an hour and the bone slid out with no issue.
This is the butt after after I unwrapped it.
I did not use a towel and kinda ripped off a piece of the bark.
I loosely shredded it with my hand and let everyone decide on the sauce they wanted to use/how big their chunks were.
I think it turned out awesome.
