Hey all, as said this is my first go at bacon on a stick. Been wanting to try this for a while now & finally got around to it. Won't get into a lot of details of the prep & all cause Bears SBS covers all of that. Thanks Bear ! Here's the link to his SBS.

So last Tuesday nite got the spares cut up & in the TQ & brown sugar. Into the fridge for a couple days.


Pulled them out of the TQ & brown sugar mix a couple days later, soaked & done the fry test... YUM !

These went back into the fridge til yesterday... My sous chef was breaking in her new BBQ tools on some beef short ribs & I cooked these on the other side of the GMG while she cooked the short ribs. If your interested in the short rib cook, I'll post the link below.

Cooked these at 225* til probe tender. Let em rest a few & sliced. Wish I'd have done these before now, the flavor is amazing. The fam all really enjoyed these & we will definitely do this again. Served with some homemade Mac salad.

I have done Bears step by step on these only I wet cured them in pink salt instead of TQ Yours look better than mine I going to try it again only this time I'll be doing a dry cure with TQ and brown sugar. My last ones tasted real good but if your tasted as good as they look then yours tasted better than mine.

 
About how long did you smoke them? Do you know what internal temp they were at when they were done?
