For my first cook on my Austin XL, I did burgers and crab stuffed mushrooms, both turned out good. There is definitely a learning curve with it, where to place the food, when to use the flame broiler etc. here's the finished product:

Mushrooms were good, not as gooey as I'd like them to be. Next time I think I'll add some Mozzarella cheese to the mixture to help with that. Also for the burgers I think I'm going to flame broil them as soon as I put them on the grill and once both sides get a kiss of fire, move them to the sides so them dont burn.

I'll admit being new to the pellet grill thing, its kind of intimidating how much it smokes upon start up but its funny as soon as it catches flame.. the smoke just rushes out of there and starts burning cleaner.
I thought my phone could catch the flames shooting up through the "flame broiler" slits but it didn't. But the flames shoot up pass the food grates so you gotta be careful not to burn your food.

As you can see with 1,000 sq. ins of cooking space there is plenty of space for food. I'd say you could easily fit 3 dozen burgers plus the top rack for dogs or brats too!

I got a Boston butt and baby-back slab thawing for Saturday to do my first actual smoke with it. I'm using some of the PP from the butt to do some tacos for New years. but I'd give it a thumbs ups :emoji_thumbsup:for the grilling part of it, just need to learn the best route of doing some foods... I'm excited to try the flame broiler with a steak or even a steak out of my sous-vide.

I'll probably be posting another thread for my first smoke with the Austin XL on Saturday and I was thinking if anyone is truly interested in maybe getting one of these, I would be willing to do a "full" review Thread on it if needed/ wanted. I will say for the price, you can't beat the value. I'd imagine to get a Traeger of similar size, you would have to pay upward of $1,500( not dis-ing on Traeger) but you do get what you pay for and since its cheaper, it is missing some features which you might found disappearing. Example temperature settings between the pre-sets( 250 to 300 to 350 to 400 to 450). Personally me I couldn't be happier and can't wait to cook on it again!

Nice looking Que... Just a few tips for you to keep that Austin XL happy. If You have a Shop Vac, get into a habit of using it after every cook and keep the “Fire Pot/Burn Pot” clean. Foil the Flame Broiler with heavy duty foil and before you fire up the Austin XL use some Pam BBQ Grill spray on the flame broiler, then foil it and spray the Grill grates also. When you’re done bbqing and plan on cleaning your grill, after washing and drying the flame broiler, You must oil it down with cooking oil or spray it down with the Pam BBQ Grill spay.. If you don’t, you’ll have a rusty mess on your hands. These Grills are not self cleaning and the worst thing anyone can do with a Pellet Grill is not keeping it clean. If You haven’t already, research all you can here about the PB Austin XL... Knowledge is everything.. and lastly, never take short cuts on the preheating of your grill.. Always preheat at 350* for 20-30 mins with the correct P-setting and You’ll never suffer flameouts or crazy temp swings. Good luck and enjoy your Austin XL.

Bought mine in may,have had 2 probes go bad and a grate that cracked,cooking wise it has done great,my son bought me a wifi thermometer so I can look at meat temps on my phone no matter where I am,very satisfied with this unit ,no long smokes in a few weeks a pork or beef steak here lately,

I just purchased an Austin XL last night at wal mart for $350 on clearance thanks to another threads suggestion of the brickseek website. It was still $500 locally.

I have been smoking on a Bradley digital 4 rack for about 6 years and thought it would be nice to add a pellet grill into the mix with my Weber gas.

I am in upstate NY and like to do a lot of smoking during the cold winter months and always had issues with temperature in the Bradley.

I think I am understanding the P settings correctly. The lower the P Value the more pellets burn and the steadier the temperature but less smoke. Is that correct?

Looking forward to your review after your first smoke this weekend. I will be putting mine together after the New Year and hope to use it shortly after.

Your understanding of the P-setting is correct. In cold climates/temps, use a lower P-setting number like 2 or 3.. P-setting number 4 is the factory default. Never use P-setting numbers 6 or 7.. If You do, your grill will have a greater chance of flaming out. P-setting 5 is great for smoking and for warm/hot climates... It’s always better to ask questions and avoid mistakes then to jump in blindly... Going off what’s said on info commercials and later regretting it.. I know You’ll enjoy your Austin XL.. It’s a great grill.

So I need to find a wireless Thermometer that I can monitor the temp of the smoker and be able to set alarms to alert me when the temperature goes too low or gets too high, anyone can point me into the right direction?

ThermoPro, or Inkbird XS, can do those. Both are sponsors, both offer SMF members discounts.
If you want to spend big bucks there is those Fireboard's.
And no doubt many others...

I have a TP 08 I use for pit monitoring because it has the better range, WiFi.
I also have the Inkbird which is Bluetooth. More Wow factor, fancier graphics, but limited range at my home.
The Fireboard's are full blown snazzy and fancy auntzey all in one kitchen magicians. Probably the ultimate in WOW factor.

I like the path I took. My eggs aren't all in one basket. I have the range with the TP-08, but 4 probes with my Inkbird (Which is more than I'll need for almost all of my uses).
I'm not one for a lot of alarms. They irritate me. So usually a Pit alarm, and shut off the rest.
The Inkbird has a rudimentary graph displayed on your Smart Phone. My jury is still out on the Inkbird, but I like it.
 
As Sonny said above any of those thermometer/probe combos are very good ones.
It just depends on how fancy you want to get and are willing to spend.
I use a ThermoPro TP20.
