First cook on new smoker

Well it’s my first cook on the GC 28, why, oh why did I have to cook a brisket! Sitting here staring at a dot thermometer reading 173. Wishing that my brisket would get done. Is that the brisket stall blues?
 
Yep, thinking I should have went with ribs right now, but when it’s done I’ll be happy it’s brisket
 
Patience is a virtue and the results are fabulous like my supper tonight. I personally haven't used a thermometer in years.

Absolutely. Texas crutch works great but time and temp turns out a better bite.

Not too bad. No pics, I think my camera was broken, was seeing two of everything when I tried to take them. Lol. Great smoke ring, tenderness was awesome, awesome bark, but a little dry. Ribs are up next this coming Tuesday will take pics of them because I am doing them at work, so I think my camera will be working right.
