Well i have been smoking on my Smoke Vault for many many years. But brisket has alway intimidated me until now. I cooked my first brisket last night and it turned out spectacular. This is going to have to become a staple. It was a small brisket about 9.5lbs before trimming it.

I'm in the same boat, haven't done one yet and always have been a little intimidated by them

I've said it before and I'll say it again. Brisket is what the Good Lord eats when He is hungry.

I like chuck on the smoker - but nothing trumps a perfectly done brisket. It's tops for curing, smoking, and even just pot roasting.

Nice work! Congrats on busting your brisket cherry. Someday I will bust mine.

Plenty of reason to shy away but for me it is just too much poundage. I like how you scored a 9.5lb.
