Well, there may be a red tide or blue tide coming our way in 2 weeks, but there certainly was a pork tide washing over our place!!

We went to town again (its been about 2 months) and...low and behold!!...Costco (Savior of the Islands) had pork butt $10 off a 14 lb 2-pack!! We bought 2, so now we have 28 lbs of pork butt to turn into a variety of fresh and smoked sausage over time.

We also have our new Hakka 7 lb sausage stuffer and casings ordered from Amazon (already put in my signature), cure #1 already here, and all the herbs and spices to make a wide range of sausage on hand.

Soon.....soon....

My wife is headed there this week to pick up a pack. I am out of breakfast sausage, bacon, and canadian bacon. May have her get two since hosting 25+ for turkey day weekend.

I like where this is going.
First up: Italian sausage. Months ago, Costco stopped carrying it. They used to carry it all the time, and at a quite reasonable price. The ONLY place to buy it without a 200 mile round trip charges stupid money for it, so we must take matters in our own hands!!

Second: Brats! Costco does, occasionally, carry Johnsonville, but no others, and not that often. Their price is not great, but when there's no other choice...and they know it!

And, snack sticks!! (picture a drooling Homer Simpson)

We're lovin' the ability to tailor sausage flavors to our tastes. A batch of Amber Ale has just gone into conditioning, and it pairs so well with sausages of all kinds.

The retired Hawaiian life is good!! I think a couple of smoked, reverse seared prime steaks for dinner tonight would be a great way to celebrate porkopeia!! :D

I hope that sale is at your Costco, too! We're going to make our first Canadian bacon very soon. That's why I bought cure #1 early. I never used it before.

We have 2 hunks of pork tenderloin in the freezer, and are going to smoke them together, one in the regular way we do it, and the other dry cured and seasoned for bacon. It will be comparison taste test time!

We may...may...do a dry cured pork belly bacon project some time in the future. No financial reason for it, as Costco sells pork belly for the same price as bacon. We haven't decided...

We dearly remember those many years in the past when we hosted huge parties. So much fun, and I'm sure you enjoy yours, too.
