My first butt smoke on the new Pitboss classic. Just got this smoker last Friday and I have smoked a roll of Blue&Gold sausage, some chicken breasts, jalapeno poppers, and some porkchops. My first Butt went good, I think. I used a sugar free rub of my own creation due to keto diet. Love the smoker so far.

Cook (uncovered the whole time) internal temps - smoker at 250

8:00 40deg
9:00 111deg
10:00 149deg
11:00 168deg
12:00 173deg
1:00 181deg
2:00 190deg
3:00 198deg
pulled at 3:40 at 204deg
rested in cooler for 1hr

Welcome from ohio! And nice job on that first butt! You came to the right place. Lots of good people here and several using Pitt boss. Also. Check out some of @jcam222. Stuff. Every thing he posts is 100% keto. He turns out some good Q !

I did not, I did not have everything on hand that I should have to do this cook, but went ahead with it anyway .
