I have done many St Louis style spares, but this will be the first BB!   I cut two racks in half to fit the rack.  Gonna give them the 2, 2, 1 treatment.

Looks awesome! I just got a rib rack for mine. Haven't tried it yet. Did you use the top or bottom grill?

I put these on the top.  Using the Weber rib rack, not sure I could get it on the bottom, but never tried either.  Since I use a dry water pan, bottom may radiate more heat?  Not sure.

thanks Al!  I have done many St Louis style spares, Wish I had tried the BB sooner.  These were good!  My wife laughs at me because after every cook I say "I can make the better next time" (just from trial and learning, remaining calm etc.).  After this cook she just said "don't mess with this - just make it again exactly the same away."    : )
 
I just bought a that same rib rack yesterday for my 5 racks of ribs.....I don't know how I felt about it. I think they are a tad small (the part that the ribs actually rest on)..I wish they were a little longer so the ribs don't fall and lean down so much.....Isnt 5 hours for baby backs a little long? I made St Louis ribs yesterday and they took about 4.5 hours and the heat fluctuated between 225-250 for those hours....2 hours on, 2 hours foiled, and about 20 minutes or so with bbq sauce.

I also have only smoked ribs on the top grate, because I don't like the mess of having to take the top grate off and reaching down in a hot smokey fire trying to handle ribs. Ive actually never used the top grate, but going to research how people do it or methods for it.
