    as a diehard sausage appetizer guy at all my parties and tailgates i was just curious what everyones favorite sausage was

  4. Yes it is very good, a few of the butchers around here make it.  This is one recipe I want to duplicate, but non of them will give up the recipe. :(

    I like andouille, I know its a seasoning and not a sausage but I love that cured black peppery bite. Grilled andouille with red beans & rice....... Hard to beat IMHO

    Thats a hard one to answer.....I dont have a favorite.....It depends what the mood is at the time. There are so many different sausages from different Ethnicity from home made to store bought. I would have to say all of them especially if they were home made.....

  12. If I absolutely had to choose just one it would have to be Portuguese Chouico. Very flavorful and extremely versatile. I use it in soups, spaghetti sauce, as a pizza topping, fried with eggs, on a bun etc. etc. etc.

    Hi I have two favorite sausages #1 is Italian with some green peppers & onions, #2 is a GOOD German Bratwurst.

    I'm still looking for a good Bratwurst recipe..Tired some of package mix ones, taste weren't even close to what I ate in Germany.

    South Louisiana is sausage heaven.  Every grocery store makes their own fresh and smoked sausage and Andouille.  Every country boy does too.[​IMG]

    MMy neighbor across da street makes from 60 to 100 lbs of smoked Andouille every week this time of the year.  He uses the money from selling it to fund Christmas.  Also they don't call my buddy "Smokin Sam" for nothing.

    So many yet to make and then remake the ones you're fond of. Of course, my favorite one is the one I'm about to stick in the pie hole. A good hot link is hard to beat...Andouille is right up near the top of the list as well. And I had an alligator sausage once in New Orleans for breakfast with grits and eggs that was over the top. Still remember it after all these years......Willie

    Fresh - Spicy Italian

    Smoked - Polish Kielbasa

    And my favorite of all time...  Dried Portuguese and Spanish Chorizo....heaven...

    My favorite is a beef and pork mix cajun sausage smoked over pecan.  These were normal all over Evangeline parish and Acadiana. Next would be  a spicy Italian with lots of fennel & anise like they make around New Orleans or a jalapeno hot links cooked over mesquite. (thanks Texas)  :)
