fat for ground burger???

Man I would have a tough time grinding those... Happy to help you out and grill them so you don't have to grind them.

as for fat content...I have trimmed a chuck roast and briskets pretty lean before grinding and never felt there wasn't enough fat. Never added fat either. my $0.02 on that.

What is WD?
Dave I have about 20lbs of rib eyes that were $4.99 in the freezer, some of them will be ground...still cheaper than the $13.99/lb burgers I was getting at the butcher.

We don't have them either, we are getting our first Wegman's at some point (still building it)
After Winn dixie (my preferred grocery) closed, we were left with Kroger, Save A lot, and wally world. I really didn't like any of them.

Meijer then built a store here, and later on, Aldi. I mostly shop at Meijer but also hit Aldi a few times a month.

We have none of those here (wally worlds here don't do groceries) we do have Aldi and Lidl. There are a ton of other grocery places like shoprite, stop n shop, Whole foods, trader joe's, restaurant depots and many other regional chains.
 
The ribeyes should be fine without adding fat, but if they are too lean, you should be good with the Picanha fat, you can also grind in slices of bacon (my favorite as it adds fat and flavor) for venison burgers that need a lot of fat, besides bacon; I also use tallow and/or grind frozen butter in.

I wouldn't hesitate to grind some . I did 3 of the NY strip burgers last night . The flavor is fantastic . Hit 'em hard with the Whiskey burger seasoning . Pre -smashed and cooked from frozen on the Blackstone . Even at $7.49 a pound , 3 - 1/4 pound burgers were only a couple bucks a piece . Plus the quality is worth the money .
No added fat to these . They hold together great .
