I picked up today what was labeled an eye round roast. I know this cut would generally be cooked as roast beef. however it has such beautiful marbling and Inter fat. Anyone have any experience cooking something like this into the 200 internal temp? Any ideas? Take a look at this thing!

Season and Smoke at 225 or higher until probe tender. That Beef is mislabeled. I'm sure it's a Chuck Roast. Actually, better tasting than a Eye Round. That much Marbling would have to be Wagyu, and at $3.99/lb...That Ain't no Wagyu..JJ

Whatever it is. It looks like a damn fine slab of meat. Great score!

Looks like a real nice Chuck Roast!!
I'd Smoke it to make "Pulled Beef", like my Step by Step below:
If you want to slice it, pull it a few degrees earlier.
