For my evening meal tonight I decided to smoke some pork loin
I cut off a 3 lb. piece
Scored it
& gave it a nice coating of rub.
I put it in the MES at 225 AMNPS running oak & apple
While the loin was smoking I made some strawberry stuff
Just finished blending.
& into the container then the freezer to set up.
Loin done - ready to wrap & rest. Time to get busy on the reduction.
