This is the smallest chub. Its ready.

Another UMAi finished salami with great results. Elk salami using the UMAi salami bags. No fancy equipment needed. Easy Peasy nice and easy.

The rest of the chubs looking about another 2 weeks.

I might have to try this sometime, just to see what the "old world" sausage really tasted like. I don't think I ever had any truly dried sausage in my life.....I'm a little nervous about doing something wrong and having an unsafe product when it is complete.

You will be fine, its not that hard. Just keep your processing area clean, wear gloves when cutting, mixing by hand, stuffing.
