Thanks I was going back through old post and saw your original post. Looks like a nice smoker. I'm going to build a 55 gallon one can you run multiple grills in yours. Salmon seasons coming and want to do some big batches. I was trying to figure out if I wanted a electric element were I can adjust the temp or just run the set one like you did. Should be a step up from my old electric Brinkman. I think this could get addicting!!! John

You could add more grates no problem, also you could just take a dimmer switch and make a box that you could plug it into to adjust the wattage. Just make sure its rated fro 1500 watts.
I use chargriller pucks under the element they have them at Home Depot in the outdoor section, you can't see them because of the plate on the element. I do have one ball valve on the bottom to regulate air flow.
