Woke up 15 minutes ago, MES is turned on and warmin up! Pulled pork is on the menu for this evening. Here is what im starting with! Rubbed up, wrapped in plastic 8 hrs ago and put in fridge.
How big is that PB? Be sure to plan on about 2 hours per pound if cooking between 225 - 240.
You can shorten the cooking time if you go up to 275 - 290, just be sure to adjust for more smoke on the front end...the first time I smoked pork butts at a higher temp I didn't account for this and they weren't as smokey!

Total time in smoker was 9.5 hrs. I wrapped in foil about the 7hr mark. Took it at when it hit 203IT and then put two old towels around it and into a cooler for an hour. I tried to pick it up to put into a bowl and it fell all apart! Taste good and nice shine and juicy flavour. My best PB to date.
